My name is David Mebane and I am a lifelong traveler that experienced my first international trip as a 2nd grader, and I haven’t stopped since. I founded Fat Tire Tours in Paris, France in 1999 and love showing people around the City of Light. That passion has grown to include other incredible destinations around the globe, and is the genesis for Kairos Tours. I don't know every destination on the globe, but I do know several well, and I love to take people with me to create experiences and memories that last a lifetime.
I live in Austin, Texas with my wife Kelly and our son Weston and daughter Caroline. However, we spend as much time as we can elsewhere since there is nothing better than an adventure with family and friends.
Paris has cultivated its romantic identity over centuries, drawing from ideals of courtly love in the Middle Ages to the passionate expressions of the Romantic Era. From the 15th and 16th centuries, the Renaissance celebrated beauty and human emotion, influencing poets and artists who immortalized love and human connection within the city's burgeoning cultural landscape. Later, the 19th century cemented Paris's reputation as a place of profound passion and even heartache, inspiring literary masterpieces like Victor Hugo's Les Misérables, which captured the city's complex spirit. Grand boulevards, historic bridges, and intimate courtyards all bear the echoes of countless love stories that have unfolded within their confines, contributing to the city's timeless allure as a symbol of romance.
Bordeaux's rich history is intrinsically linked to its renowned wine, a story that began nearly 2,000 years ago with Roman vineyards establishing viticulture in the region. A pivotal chapter in Bordeaux's development unfolded in 1152 with the marriage of Eleanor of Aquitaine to Henry Plantagenet, who would become King of England. This powerful union brought Bordeaux under English rule for three centuries, a period that profoundly shaped its wine trade and cemented its economic and cultural connection with England. This long and prosperous relationship with the English market led to Bordeaux's significant growth and the development of its world-class wines, leaving behind an architectural legacy of elegant 18th-century design and a reputation for viticultural excellence that endures to this day.
The history of Sauternes, a region renowned for its exquisite sweet wines, is steeped in a fascinating blend of natural fortune and human ingenuity. While winemaking in the area dates back to Roman times, the distinctive "noble rot" (Botrytis cinerea) that defines Sauternes wines became central in the 17th and 18th centuries, partly due to Dutch merchants who favored sweeter white wines. Legend attributes the discovery of this unique process—where specific misty morning and sunny afternoon conditions lead to the dehydration and concentration of grape sugars—to serendipitous delays in grape harvesting. Whether by a German wine dealer in 1836 or the Marquis de Lur-Saluces in 1847, this "happy accident" created a wine of unparalleled sweetness and complexity. This unique microclimate, through nature's subtle magic, allows for the creation of one of the world's most luxurious and intriguing wines, a testament to how specific environmental conditions can yield something truly extraordinary.
