Mount Abantos, its pine forests and the Herrería estate form the natural surroundings of this place, which has its focal point in the Monastery of El Escorial. Its urban layout is composed of a harmonious collection of ancestral homes in the Herrera style, with rationalist avenues and small squares in an earlier style.
The Madrid-region town of San Lorenzo del Escorial, a Historic-Artistic Site, grew up around the Monastery of El Escorial. This architectural gem, declared a World Heritage Site by UNESCO, was ordered to be built by Felipe II in the 16th century to commemorate the Battle of San Quintín. An urban layout slowly developed around it, since the aristocrats and middle classes from the capital had their summer residences erected here. Capital of the region of El Bierzo, is one of the major staging posts on the Pilgrim's Road to Santiago de Compostela as it passes through the province of León. The historic quarter of this town sits below an imposing castle built by the Knights Templar.
The first records of Ponferrada are as a former citadel in Roman times. From the 11th century, the rise in pilgrimages to Santiago de Compostela spurred the appearance of the hamlet of Pons Ferrata, located on the Pilgrim's Route to Santiago de Compostela and named in this way because of the building of a bridge reinforced with iron. In 1178, the King Fernando II of León placed this flourishing settlement under the custody of the Order of the Temple. The Knights Templar used the site of a primitive Roman fortress to build a castle in which they settled and which, at the same time, protected the passing pilgrims.
This small mountain town marks the natural beginning of the ascent towards Las Médulas, a unique cultural landscape that was declared a World Heritage by UNESCO. Then you'll head to Tielve or Sotres, two very small villages near the mountains where the prestigious Cabrales Cheese is produced. You’ll be taken to a cave where this blue cheese is cured and will be given a tasting of different local cheeses.
Also known as Quesu Cabrales or Cabraliego, this is one of the most important blue cheeses in the world. It is made with cow's milk or with goat and sheep's milk, which is more highly valued. Its name comes from the Asturian town where it has been made since time immemorial. With a strong flavour and penetrating smell, it is a fatty cheese, with a natural rind, produced normally with a mix of raw cow's, goat's and sheep's milk. It is aged in natural mountain caves at a temperature of between 8º and 12º for between two and four months. These conditions favour the penicillium mould, which creates the characteristic bluish-green streaks. In addition to being eaten alone, it is highly valued as a base for sauces and for accompanying many haute cuisine dishes. It has been protected by a Denomination of Origin since 1981.
In this elegant family owned winery, we will taste 4 of their top wines, paired with 4 tapas/pintxos.

Experience the joys of sea kayaking through La Concha Bay in a guided tour. Float past historical buildings, paddle through a nature-filled island or take in the panorama of the Donostia skyline from the sea. Beaches of fine sand contrast with sharp cliffs. In our agile boats we can explore the most hidden corners.
The crossing starts at the Ondarreta beach in the La Concha bay. An expert guide instructs us on the basics of security and paddling. Attending his advice we went to visit the most emblematic places of the bay and enjoy the best views of Donostia.
Depending on the desires and the conditions of the sea, we can leave the bay and explore the skirt of Mount Igeldo. It is a mass punished in winter by heavy storms but in summer it shows its most docile face. We are surprised by the contrast between this hostile nature and the kindness of the refined Donostia.
We will finish the trip visiting Santa Clara Island. It is one of the almost virgin redoubts of the city. Only accessible by boat, no one lives in it. Its small beach is crowded in the sunniest days but it remains deserted as soon as the sky clouds.
The lively pier on the pier offers us the opportunity to have an aperitif before returning to the beach.
Let's enjoy a different experience for lunch. I'll book a Michelin starred restaurant town so you can see the differences between the amazing local food and the haute cuisine in this pother kind of restaurants, something you must do once, at least!
