Perched on the edge of a high cliff rising from the Adriatic Sea, Polignano a Mare is one of the most spectacular and popular locations on the Apulian coast. The historic centre of this seaside village is a maze of narrow streets that slope down towards a tiny beach, the Lama Monachile, which cuts the cliff in two. Underneath the town, a tangle of caves invites you to discover a crystal-clear sea. Polignano is also the birthplace of Domenico Modugno, the singer-songwriter of “Volare”, the most famous Italian song in the world.

Monopoli is one of Italy’s best kept secrets and certainly lives up to its name which comes from the Greek words ‘monos’ and ‘polis’ meaning unique city. A visit to Monopoli should start with its picturesque harbour. Monopoli is a prosperous fishing port and the Porto Vecchio is always bustling and lively. Don’t miss the opportunity to watch the fisherman bring in their catch each morning or mending their nets in their traditional blue ‘gozzi‘ rowing boats. Monopoli’s centro storico is absolutely charming and it’s worth just setting a few hours to explore its narrow, cobbled streets and alleyways, lined with whitewashed shops, bars, restaurants and houses. Other attractions worth seeing include the Basilica della Madonna della Madia. This Baroque cathedral was originally built in 1107 but was almost completely rebuilt in the 18th century. Legend has it that the Madonna della Madia came ashore here on a wooden raft, the logs from which were then used to construct the cathedral roof. Its interior is dramatic, furbished top to bottom in marble in hues of red, green and yellow.

You will enjoy a visit of the city. Matera, Basilicata's jewel, may be the world's third-longest continuously inhabited human settlement. Natural caves in the tufa limestone, exposed as the Gravina cut its gorge, attracted the first inhabitants perhaps 7000 years ago. More elaborate structures were built atop them. Today, looking across the gorge to Matera’s huddled sassi (cave dwellings) it seems you've been transported back to the ancient Holy Land. In 1993 the town was made a UNESCO World Heritage site, for being "the most outstanding, intact example of a troglodyte settlement in the Mediterranean region, perfectly adapted to its terrain and ecosystem".

You will stop in Alberobello,. Alberobello has been made a UNESCO World Heritage Site for its unusual districts of trulli, the characteristic white-washed conical-roofed houses of the area. Here you will get to see a concentration of over 1,000 Trulli houses. A trullo is a small dwelling built from the local limestone, with dry-stone walls and a characteristic conical roof. It is a traditional and simple type of structure which you'll see dotted around this part of Puglia, sometimes in its most basic form used as a kind of shed among the olive groves.

You will reach a Masseria, in the Valle d’Itria, heart of Puglia surrounded by trulli and ancient olive trees, where you will meet your chef to learn how prepare some local dishes. You will prepare with your hands “orecchiette pugliese” and taste it! After the lesson and food preparation, you will taste the recipes prepared during the cooking class, all accompanied by an excellent local wine.

Here you will see also the historical city center with Duomo and its main attractions. Ostuni, the White Town, is picturesque and to be experienced. Ostuni, a renowned tourist destination, boasts a wonderful medieval village, rich with alleys and whitewashed houses, in a maze of streets which recalls an Arab Kasbah. Take a stroll in the old town centre, called “la terra” (the land) to distinguish it from the more recent “marina”: it offers picturesque spots amid the alleys, sloping stairs, courtyards and small squares, where whitewashed houses appear, embellished with geraniums, craft shops, typical restaurants and small shops.

After the guided tour of Modica, you will visit one of the oldest chocolate factory. Here in Modica they have been producing chocolate for six generations and for more than 150 years they have also handed down sweets, nougats of the Modican and Sicilian tradition, mostly of Arab or Spanish origin. In 2008 it was included by Eurispes in the list of 100 Italian excellences. During the tour, visitors can witness the entire chocolate-making process. They will demonstrate how we produce a chocolate bar – starting from the cocoa bean – and the “battitura” phase, the moment when the bar takes its final shape. The tour concludes with a tasting session that includes various types of products, in addition to chocolate.

In the afternoon you will meet your guide at the hotel lobby to enjoy a walking tour to visit the Valley of the Temples which is certainly one of the most outstanding sites of the ancient world and one of the highlights of the tour. A string of imposing temples stands on a ridge facing the sea designed both to be visible to sailors and to signify that the gods protected the sacred city from danger. You will explore the Temple of Juno built around 450 BCE, the Temple of Concord c.440 archaic Doric style in 520 BCE, and the Temple of Zeus. The tour takes from 2 to 3 hours walking on a track. On the way you will stop in Erice. Erice is a corner of paradise at the top of a mountain where a magical panorama offers itself to the visitors. Both in winter and in summer, Erice gives away some special views of its land but through two versions, based on the weather of the season. Erice is located in the west coast of Sicily, half an hour by car from Trapani, perched 751 m high on the mountain overlooking the sea. The history tells about many peoples who settled in Erice thanks to its altitude where it is easier to defense ownself but still close to the sea to exploit the maritime navigation. So that’s the reason why Erice is full of ramparts and ancient walls useful to protect the town and nowdays they became important to feature the landscape. Tourists who visit Erice are enchated by its atmosphere because, as already said at the top, this town is able to offer two different magical view: immersed in the fog during winter, illuminated by the sun during summer. The fog makes Erice something of never happen, like a ghost town detached from the rest of the world, while in summer, thanks to the sunlight, you will be able to appriceted better its beauties but without the medieval atmosphere of the winter. Anyway, Erice is always something of special, a unique town in Sicily you have to find out during your holiday in Sicily!

This morning your driver will pick you up at the hotel to reach Cefalù. Cefalù is a gorgeous town located on the northern coast of Sicily, and one of the major tourist attractions in the region. Built on a promontory dominated by a sheer cliff, Cefalù has grown around the Norman Cathedral wanted by Ruggero II, still keeping its ancient print. The Cathedral, began in 1131, is one of the most interesting medieval monuments of the island and boasts outstanding mosaics and a wonderful cloister. An impressive mosaic of Christ Pantocrator stands out above the altar, twinned with the Palatine Chapel in Palermo and the Cathedral of Monreale. A large part of the town is pedestrian; just stroll through the medieval narrow streets, and admire the picturesque houses on the sea and the long beach of fine sand; than, in the afternoon, take a bath in the amazingly blue water of its sea: an experience really worth remembering!
