Afro-Brazilian cuisine is much more than a combination of ingredients and recipes; it is a living heritage that carries centuries of memory, faith, creativity, and resilience.
Born from the forced encounter between enslaved African peoples, Indigenous populations, and European colonizers, this gastronomy emerged as a form of cultural preservation and reinvention in the face of adversity.
Its flavors are rooted in African ingredients such as palm oil (dendê), okra, black-eyed peas, yam, coconut, peppers, and leafy greens, blended with Indigenous techniques and European seasonings. From this fusion came iconic dishes such as acarajé, moqueca, feijoada, vatapá, and caruru, all deeply embedded with stories of celebration, spirituality, and identity.
In Afro-Brazilian religions, cooking is also a sacred act. Many recipes have been preserved within Candomblé and Umbanda terreiros, where food is offered to the orixás and shared as a symbol of community and connection. Eating, in this context, becomes an act of reconnection with ancestors and a means of transmitting cultural knowledge.
Afro-Brazilian gastronomy is therefore a political language. Each dish prepared by Black chefs and cooks reaffirms African contributions to Brazil’s national identity. Black-owned restaurants, like those visited in this experience, celebrate this legacy on the plate while strengthening networks of solidarity and Black entrepreneurship within the culinary landscape.
Firstly, We’ll have some cultural context visiting historical sites and afterwards we'll visit the most prominent Afro-Brazilian culinary spots in Rio de Janeiro, all led by Black chefs and cultural guardians. At each location, mini tastings will be offered, showcasing the richness of flavors and traditions that have shaped the country’s identity. Notice the different packs and what is included in them.
