If you opt for the pre-trip extension, we will first meet in Dublin. Visit the ancient monastic site of Glendalough and the scenic Wicklow Mountains before experiencing a hands-on Irish cooking class at Ballyknocken Farm. Discover the edible and medicinal plants of Ireland with local foraging experts. In Howth, meet a local fishmonger before visiting Howth Castle for a seafood-focused cooking experience in its historic kitchen. The journey concludes with travel onward to Edinburgh.

The final chapter of this unforgettable journey takes us to the historic city of Edinburgh. Here, we'll explore Scotland's dynamic food culture, rich culinary heritage, and innovative approaches to nutrition and public health.

Led by local experts, and a kilted guide, participants will learn about contemporary nutrition initiatives while experiencing the country's remarkable history and landscapes. Visits will include historic castles, artisan food producers, local markets, and culinary experiences that highlight Scotland's distinctive ingredients and traditions.

May 30th: Pre-Trip Extension in Dublin, Ireland

Arrive in Dublin, settle into accommodations. Afternoon walk to view the Book of Kells at Trinity College. Welcome Social

Day 2

May 31st: Dublin Pre-Trip Extension

Glendalough. Tour the Monastic Site of St. Kevin with a preserved Round Tower, an architectural structure unique to Irish Religious sites.Continue our journey through the scenic Wicklow Mountains to BallyKnocken Farm and Cookery School for a guided preparation of a 3-course lunch of typical Irish dishes. Finish the day with a traditional sheep herding demonstration.

June 1st: Pre-Trip Extension in Dublin, Ireland

Meet foraging experts to explore seaside and meadow foraging, with a discussion of the food and medicinal value of the plants. Picnic lunch, then return to Dublin for a free afternoon to visit local sites and shops.

June 2nd: Pre-Trip Extension in Dublin, Ireland

Travel to Howth to meet with a fishmonger, then walk to the nearby Howth Castle for a tour and seafood focused cooking class in the original castle kitchen.

Dr. Laura Wyness- Scottish Food Ambassador and co-creator of the Scottish Eatwell Guide, presentation and discussion of the Scottish Food and Nutrition Landscape. Lunch on your own. Afternoon visit to Cheese Monger shop for tasting. Free evening.

Ardross Farm visit and tasting. Ardross Farm is a family-run, award-winning working farm and farm shop located in the East Neuk of Fife, Scotland, near the coastal town of Elie. Pick up food for lunch from the farm store. Andrew Carnegie Museum. Free evening.

June 9th - Perth and Angus

Megginch Castle tea garden and tasting. Megginch Castle is a private home and 15th-century tower house located in the Carse of Gowrie in Perth and Kinross, Scotland, situated between Perth and Dundee and acquired by the Drummond Family in 1664. Glamis Castle , a grand, historic Scottish castle in Angus, Scotland. It has been the home of the Bowes-Lyon family since 1372. It is famous as the childhood home of Queen Elizabeth The Queen Mother and the birthplace of Princess Margaret. Free evening.

Day 8

June 10th - Dunbar

Dunbar Belhaven smokery visit and tasting. John Muir museum. Return to Edinburgh for a farewell dinner at Cafe Royal -Edinburgh’s iconic oyster bar and restaurant.
