We’ll begin our journey with a private airport pick-up and transfer to Hotel Eco Boutique Bidasoa, a stylish and sustainable retreat tucked into a quiet residential area. Known for its eco-conscious design, lush gardens, and inviting pool, it’s the perfect place to unwind after a day of travel. Once checked in, we’ll have some free time to relax at the hotel or explore the surrounding neighborhood—whether that’s taking a peaceful walk, visiting nearby shops, or following a few curated recommendations we’ll provide.
In the evening, we’ll come together for a welcome dinner at Cora Bistro, a modern spot celebrated for its creative seasonal cuisine. It’s a chance to slow down, settle in, and share a delicious meal as we get to know one another and look ahead to the experiences to come.
The following day invites us to move and connect. We start with a gentle morning yoga or stretch session at the hotel’s patio, before heading to the foothills just outside the city for a biking tour through the historic Viña Santa Rita. As we ride through vineyards and gardens, we’ll learn about Santa Rita’s winemaking legacy and its thoughtful approach to caring for the land, people, and community. Their practices are guided by a long-term vision rooted in environmental stewardship and social responsibility, inspired by global standards and local tradition.
A gourmet picnic in the gardens offers time to rest, reflect, and take in the Andes before we return to Santiago for a thoughtfully crafted dinner at La Calma by Fredes — a peaceful close to a full, beautiful day. Chef Sebastián Salas, the creative force behind La Calma, is known for his commitment to sustainable sourcing and elevating Chilean ingredients through refined, seasonal cuisine that honors both tradition and innovation.

October 26- 29th ~ 3 nights
We leave the city behind and head west into Chile’s coastal wine country, where crisp air, rolling hills, and biodiverse vineyards invite us to slow down and reconnect. Our destination is the Rosario Valley, home to the renowned Viña Matetic, a pioneer in biodynamic winemaking. Upon arrival, we’ll settle into the peaceful La Casona, a countryside retreat nestled among the vines, and enjoy a guided tour of the vineyard and its biodynamic garden — the heart of Matetic’s philosophy of sustainability, balance, and care for the land.
After lunch, we’ll explore the surrounding terrain on horseback, riding through scenic vineyard paths and open hills before closing the day with a seasonal dinner and curated wine pairing.
On Day 4, we begin with an optional morning yoga or stretch session in the open-air spaces of La Casona, taking a moment to ground ourselves before the day’s adventure. Then, we venture to the neighboring Casablanca Valley, where the cool coastal climate produces some of Chile’s most expressive wines. Our focus is Bodegas RE, a boutique, family-run winery that thrives on creativity and ancestral techniques. In this special “winemaker for a day” experience, we’ll craft our own REvoltijo blend, working with bold varietals like Syrah, Carignan, and Cabernet Sauvignon under the guidance of a passionate sommelier. The visit also includes a full tour of their beautiful and thoughtfully designed spaces, including the garden of ancestral grapes, the underground amphora cellar, and their artisanal shop.
As we make our way back to Matetic, we’ll have the option to stop at a nearby nature reserve or wetland, ideal for light hiking or birdwatching. The evening is yours to relax, share a glass under the stars, or simply enjoy the quiet rhythm of the countryside.
The next day, we’ll set out from La Casona at Matetic and head toward the Pacific for a full-sensory day in Valparaíso, a vibrant coastal city known for its steep hills, historic charm, and ever-evolving street art. Our time here begins with a guided walk through Cerro Alegre and Cerro Concepción, framed not just as a tour, but as a kind of walking meditation — one that invites us to move through color, rhythm, and resilience. Each mural and staircase tells a story of place, protest, and play, offering space for reflection and inspiration.
For lunch, we head to Tres Peces, a restaurant with a deep respect for the ocean and the people who live from it. They work directly with small-scale fishers and coastal communities along Chile’s Pacific coast, sourcing only species that are in season and caught using traditional, low-impact methods. Their menu changes frequently based on what the sea offers that day, highlighting the natural rhythms of the coast and honoring local culinary heritage. It’s a place where food tells a story — of place, tradition, and care.
Following lunch we'll have some free time to wander, grab a coffee, or simply soak in the coastal energy. In the late afternoon, we’ll gather for a sunset yoga session — either on a nearby beach like Playa Las Torpederas or a scenic bluff — offering a soft landing and a moment of quiet as the day winds down.

October 29-30th ~ 1 night
We ease into our final full day with a morning hike or nature walk, followed by an optional yoga session — a chance to stretch, breathe, and connect with the land one last time before shifting gears. After breakfast, we make our way back to Santiago and return to Hotel Bidasoa, where you’ll have time to settle back in and reflect on the journey.
In the evening, we gather for a celebratory farewell dinner at Ambrosía Bistro, a cozy and award-winning spot led by chef Carolina Bazán. With its focus on fresh, seasonal ingredients and vibrant Chilean flavors, the meal offers a perfect close: warm, shared, and full of intention.
On Day 7, we share a final breakfast together before check-out and private airport transfers. Whether you're continuing your travels or heading home, we send you off nourished, grounded, and inspired by all that you've experienced here in Chile.
