Our trip first , will take you hiking the beautiful northern coastline ( cap Corse )to remote ancient fishermen villages , you will take cooking classes on Corsican cuisine in a lovely villa by the sea , explore vineyards and taste delicious local wines , Next, we will head into the mountains , In Castagniccia and in Corte( former capital of indépendant Corsica) the cultural heart of the Island where we’ll visit beautiful old churches and museums , , meet with people that make some of the best Charcuterie and cheeses in the world .

We will walk around the old part of the city built by the genovese : market area , St jean cathedral ., the old citadel with narrow streets dating back to 18th century and its museum . After going back to the hotel to refresh , we'll go out for Aperitif in "Place saint Nicolas" the social heart of the city, then diner in an outdoor terrace overlooking the old harbour and serving corsican seafood specialties .
We will drive from Bastia to the port village of Macinaggio , where we will start our hike along the coast to the charming seaside hamlet of Barcaggio, northernmost point of the island . Along the way , expect old genoese towers from the 16 th , century , ancient chapels , secluded coves and sandy beaches with crystal clear waters . We will stop halfway for a dip in the mediterranean and a picnic lunch .
We'll arrive late afternoon at our charming Villa by the sea l'Allegria , then later we'll have a lovely dinner of fish and other Corsican specialties paired with some of the best local white and rose wines at restaurant U fanale
From Barcaggio , another spectacular hike along the mediterranean sea to the beautiful Seaside village of Centuri that dates back to roman times. known for its lobster fishermen and beautiful big houses built by rich Corsican that had emigrated to the USA ( Porto Rico ) and Caribbean . local grilled lobster for lunch and afternoon visits around the hamlets of Cannelle and Morsiglia to check the most impressive colonial houses . Evening cooking class ( cooking with "Brocciu") at Hotel Le saint Jean in Ersa .
We Will visit the ancient village of Roglianu and hike to the ruins of the "Da Mare" family castle which ruled the region in medieval times . Next , we will visit a goat farm , taste fresh Brocciu ( ricotta from goat milk ) and aged washed rind cheese with an incredible taste , before returning to hotel St jean in mid afternoon .
Morning departure and drive along the spectacular western coast of the cape . We'll stop half way for refreshments and snack in Nonza ( ranked in the 10 of the prettiest villages in France). Patrimonio AOC covers a little over 1000 acres near the St Florent harbor and the Nebbiu hills , it’s Corsica’s wine region most known internationally producing some incredible sumptuous reds ( niellucciu grape ) as well as mineral crisps and aromatic whites ( vermentinu grape ) . Upon arrival right before lunch time will visit a couples of wineries : Antoine Arena ( Corsica's best organic or natural winemaker "Quarco"....) and Cave Orenga de Gaffory where we will have lunch and check their modern art gallery . Mid afternoon , we will head back to Bastia to our lovely bed and breakfast in the "Citadella " facing the mediterranean sea.
Departure from Bastia and arrival in Corte Midmorning . Visit of the museum of Corsica , and old town . picnic lunch and hike in the Tavignano gorges
in the afternoon . Evening in the beautiful "E Caselle " hotel by the Vecchio river .
Drive from Corte to the village of Carcheto brustico where we will be staying in Corsica's most charming "Maison d'hotes" ( B&B ) Castellu d'orezza . the region gets his name from the largest chesnut forest in Europe . Expect to taste some of the best charcuterie in the world since farmers feed their semi wild pigs acorns and chestnuts that give the meat a beautiful marbling and a distinct taste . Visit of the 17th century baroque church "Sainte Marguerite" . Hike to the lovely ..........waterfall .
In the evening , we will have an Aperitivo of grilled famous corsican sausage "Figatellu " and learn to make Pulenda (corsican polenta with chestnut flower ).
For our courageous hikers , we finish our trip with Monte San Pedrone ( 8 miles/5hrs)
An incredible view at 360 all the way to Italy to the east and the Cinto massif to the west .
