From the hands that cultivate the land to those that cook, everything comes together in an act of culinary alchemy. It’s not just a restaurant but a political statement in favor of food sovereignty. As part of the as a part of the local Agroecological Network, which brings together over 24 peasant organizations led by women in Azuay, Morona Santiago, and Cañar, they promote agroecological production, direct sales at markets, and an Ecuadorian cuisine that both resists and innovates from tradition.We take into account: local agrobiodiversity, surplus production, seasonality, water, territory, food heritage, and products that most benefit our fellow women producers.
