About this trip

November 12-14, 2021

Nadia Gilbert presents “Sahtein,” a dive into the ancient cuisine of Palestine.

Nadia Gilbert’s “Sahtein” project brings ancient Palestinian cuisine and wisdom into the future through cooking shows, workshops, and virtual experiences.

Join Nadia and the team for a peaceful, heart-opening immersion into Diasporic Palestinian cooking. Palestinian culture is deeply tied to land and ancestral connections, both to our farms and the wild lands we forage from. For those of us in the global diaspora, recreating that feeling of home and a sense of rootedness is vital. Together, we will learn to cook traditional and inspired dishes from the region, using local and seasonal produce from where we are located. We will also learn about how we can infuse everything we cook with our own, unique healing vibrations to nourish both our physical and energetic bodies.

Join this three day, two night retreat and immerse yourself in the sharing of food culture, hands on cooking classes, and a dive into local offerings of farm raised and wild foraged foods.  This offering is limited to 15 participants.

Nadia is a Palestinian-American filmmaker, Reiki master, visual artist, and chef. Her self-produced cooking show “Sahtein,” has over 55k YouTube subscribers, and celebrates Palestinian cuisine and medicinal wisdom. This cuisine is close to the heart, and highly accessible to different diets and culinary skill levels. Nadia’s work is multifaceted, focusing on bridging cultural connections between “East” and “West,” and amplifying Diasporic voices.

Everything we consume has the power to change our lives and the world.

Itinerary

Overview of the weekend
Brief Itinerary

Arrive Friday evening and enjoy a beautiful meal prepared by Nadia and Nine Mountain staff. During the weekend, Nadia will  teach,  share techniques and lead the group in co-creating meals; sharing her wealth of knowledge on the culture behind Palestinian cuisine. Weather permitting, there will also be a wild food walk led by our neighbor, Levi.

Saturday, under Nadia's tutelage, we will prepare two main meals, with dinner being a time to enjoy light snacks and conversation. Evenings could find us relaxing out on the deck and star gazing from the hot tub.

Saturday and Sunday mornings Nadia will lead a kundalini and meditation class, easing us into the day ready to learn and enjoy!  Sunday brunch we will get to practice our skills with another co-created delight.  Guests depart by 2:00.

This adventure was quite transformative. I was with a group for the final module in a 300 hour yoga course founded and shared by Todd Norian. This particular week was focused on the Chakra system. Outside of my yoga Kula, I found myself interacting often with the grounds and surrounding area of Earthdance - it was magical. The stone walls created imaginative stories to entertain my mind. There is a faerie house and rooms for dancing, art to fill the crevasses of your heart. OH! And the folks who work to maintain the guests needs and nurture the environment are a hoot! These artists, dancers, and amazing cooks who live here were such a pleasure to chat with and share dress up with! I am eager to return with my daughter and play some more.

Meals provided were absolutely outstanding. Staff at 9 Mountain were engaging and pleasant. Kelly arranged accommodation at Skyland Farm. Left this room after one night. Cleaning standards were lacking and all communication with the owner was by text. There was a cat litter box in the non-functioning shower in the guest bath. I believe this business suffers by not having the owner/operator on site. Found accommodation for balance of stay on my own.
