FOOD ON COURSE
At Outward Bound Costa Rica, we make every effort to accommodate special diets. There is usually at least one vegetarian/vegan option on every course, and we strive to purchase locally grown and seasonal foods. As stewards of the environment we have a very strict no-beef policy due to the correlation between deforestation and cattle. We purchase most of our packaged snacks from organic based food companies based in Costa Rica. Their items include rice cakes, whole-wheat sticks, cookies, crackers, etc. They state that none of their products contain any animal derivatives.
Local Foods
The typical meal at a soda (restaurant) in Costa Rica is called a casado. It usually consists of gallo pinto (rice and beans), fried plantains, salad, cheese and some meat. Locally grown bananas, mangos, papayas and pineapples are abundant. You should also try some of the more interesting tropical fruits, such as zapotes, mamon chinos, tamarindo, guayabas and maracuyas, among others. On base, we make many fresh juices out of these fruits.
While the climate of Costa Rica is ideal for tropical fruits, the variety of vegetables is limited. There are carrots, green beans, cauliflower, lettuce, peppers, onions, potatoes, and broccoli, but there are limited supplies of kale, okra, leeks, spinach, and mushrooms. There are, however, native vegetables you may wish to try, such as pejibaye, palmito, chayote, yuca, and camote.
Dietary Accommodations
Vegetarians and vegans will have options at every meal. While on course, many meals will be vegetarian due to the unfeasibility of procuring/refrigerating meat. Texturized soy protein is common, but tempeh, seitan and tofu are not readily available. The bulk of your protein intake will stem from legumes, as almost all meals consist of some version of gallo
pinto. If eating at a local restaurant, keep in mind that locals have a different understanding of the term “vegetarian,” so it is best to specify exactly what you cannot eat (ex. no carne, no pollo, no pescado, no huevos, no productos lácteos como mantequilla y leche).
Our trail mix contains peanuts but will be modified if you have a peanut allergy. If you indicate that you are allergic to gluten, we will do our best to buy staple items such as corn tortillas and puffed rice cereal. If you are new to the gluten-free lifestyle, make sure you check with your instructor about hidden gluten inside many of our meals. The following is a list of common foods on course that may contain gluten: hot cocoa powder, white pepper, curry powder, dry roasted nuts, instant coffee, luncheon meats, texturized vegetable protein, soy sauce, salad dressing, mustard, granola, and cereal.
