Join Micah Mortali, Chef Jeremy Rock Smith, and local expert and chef Katerina Sakelliou for a week-long immersive journey in Greece that is more than a culinary and outdoor adventure—it’s a profound reconnection to nature’s abundance, ancient wisdom, and the wild spirit within you.
Guided by this passionate team, you’ll step away from the fast-paced modern world and root yourself in the rhythms of Odyssey Organic Eco Farm, a haven where land, sea, tradition, and soul come together.
Throughout the week, you’ll explore how the ancient Greeks lived in harmony with the earth, uncover the evolution of their gastronomy, and create meals that honor the environment and its gifts.
Each morning begins with mindful, nature-based activities led by Micah Mortali — experiences designed to help you slow down, reconnect with your senses, and feel more deeply attuned to the rhythms of the land. Through gentle movement, breathing, and time outdoors, you’ll begin each day grounded in the simple awareness of being alive and part of something larger.
One highlight of the week will be a meditative journey into the art of archery — not as a sport, but as a way of cultivating patience, focus, and awareness. Guided with gentle intention, this contemplative practice encourages participants to aim not just with the eye, but with the heart — to breathe deeply, release tension, and move in harmony with the landscape around them. In the quiet rhythm of drawing and releasing the bow, we’re reminded of the simple power of slowing down and listening — to ourselves, to each other, and to nature. It becomes an opportunity to ground the mind, steady the body, and rediscover a sense of presence that extends far beyond the practice itself.
From there, we’ll forage treasures from the land and sea — wild greens, fresh seafood, herbs, honey, and olives — while discovering the timeless rhythms of Greek nature and culture. In the outdoor kitchen, under the expert guidance of Katerina and Jeremy, you’ll transform these local ingredients into vibrant traditional dishes that capture the flavors of the sun, the sea, and the history of this extraordinary place.
Rewilding Greece is an unforgettable experience designed to nourish your body, awaken your instincts, deepen your relationship with nature, and celebrate the enduring harmony between people, land, and sea.

Your journey begins as you arrive by water taxi at Odyssey Eco Glamping. After settling into your natural surroundings and taking in the majestic view of Poros, you’ll gather with fellow participants for a warm welcome dinner crafted with locally sourced ingredients.
This meal introduces you to the essence of Greek cuisine and sets the tone for the meaningful connections—to nature, culture, and each other—that will define the week ahead. After dinner we will gather for our first council meeting led by Micah to orient us to the land and set intentions for the week to come.
After a traditional Greek breakfast, Micah Mortali will guide you through the first unforgettable intuitive archery experience. In this dynamic session, you will:
· Explore the history and philosophy of archery
· Learn the basic anatomy of the bow and arrow
· Practice safe, instinctive shooting techniques
· Integrate breathwork to enhance focus and aim
This practice invites your whole being to become absorbed in the moment, awakening ancestral memory and strengthening your bond with the natural world.
After lunch we’ll enjoy a guided walk through the farm at Galatas, a region abundant with fruits, trees, and herbs integral to the Mediterranean lifestyle.
Discover the deep, symbiotic relationship between land and people, the foundation of the celebrated Mediterranean diet.
Along the way we’ll forage then take our bounty into a cooking workshop led by Katerina and Jeremy where we will transform the day’s foraged bounty into a communal feast under the stars.
After breakfast, we’ll gather for our second archery session with Micah to sharpen the skills and techniques we learned in our prior practice. Building on the foundations of instinctive shooting and mindful awareness, this session will deepen your connection to the bow, the breath, and the land—further awakening your natural instincts and intuitive focus.
After a light lunch we’ll take a water taxi to Poros town for a guided history and culture tour led by a local expert. From there we’ll walk an ancient footpath above town, immersing ourselves in the island’s deep connection to the land. Along the way, we’ll learn about the sacred pine trees, whose resin, known as the “Tear of the pine,” has been used for centuries in traditional practices.
As we continue our journey taking in the majestic views we’ll gather wild greens, still staples of the local diet, and discuss how they’ve nourished the people of this region for generations.
After our hike we’ll visit the Odyssey Boutique Hotel where we’ll come together in the kitchen to transform the ingredients we’ve foraged into traditional Greek dishes, celebrating the day’s harvest with a communal dinner under the stars.
After breakfast and a morning nature meditation we’ll travel to our next destination to see fresh pasta being made Greek-style and a lunch together before we move onto our next destination.
We’ll head to the ancient sanctuary of Epidaurus, a place where the connection between health, diet, and nature was understood as a holistic practice. This sacred site, dedicated to Asclepius, the god of medicine, reveals the ancient Greeks’ wisdom in blending body, soul, and environment for well-being.
On a guided tour, we’ll explore the historical prescriptions offered to visitors, including dietary recommendations rooted in the local harvests which we’ll reflect on how this ancient understanding of food as medicine remains relevant today.
We'll have a coffee on the way home before returning to Galatas and a meal at a local taverna together!
We’ll begin the day with an earthing practice led by Micah Mortali, designed to reconnect you with the land beneath your feet. Through barefoot movement, breathwork, and mindful awareness, Micah will guide you in absorbing the Earth’s natural energies—a grounding and restorative practice to carry with you long after the retreat ends.
From this rooted place, we’ll move into our final archery session, approaching the practice with clarity, intention, and presence.
After archery, we’ll enjoy a light lunch, followed by a visit from a local bee keeper where we'll learn taste and learn the importance and health benefits of honey Greek cuisine and culture.
After enjoy free time for the rest of the afternoon. Rest, wander into town, explore the coastline, or simply relax and soak in the quiet rhythms of the farm.
As the day cools and the light begins to shift, we’ll gather for an early dinner before setting out to the seaside for a sunset fire birthing workshop led by Micah. Here, we’ll explore how to create fire using ancient tools and natural materials—like the resin of the Jerusalem Pine and the fibers of the palm tree—while the sun sets across the Aegean. Working in small teams, you’ll experience the elemental magic of birthing fire from the land, a powerful way to close the day in reverence and connection.
Today we embark on a journey to the Methana Peninsula, a land shaped by volcanic activity and steeped in natural beauty. A guided hike to the summit of Methana’s famed volcano offers sweeping views of the landscape, a reminder of the earth’s power and its role in shaping the region.
Following the hike, rejuvenate with a swim in the sea and perhaps a dip in the healing thermal springs, which locals have used for centuries to restore both body and spirit.
Along the way, visit the wetlands of Psyfta, an ecological treasure where early forms of aquaculture flourished. The day also takes us to the lemon forest of Trizina, where the fragrant citrus groves stand as a testament to the land’s generosity and its importance in Greek culinary traditions. Today, we’ll stop for lunch and see how pasta is made Greek Style.
We’ll conclude our day with a meal at a wonderful taverna.
This morning seasonal fruits, such as oranges and lemons, take center stage as we dive into jam-making or as the Greeks call it "spoon fruit"—a tribute to the wisdom of sustainable living and a goodie to take home.
After the rest of the day is free for quiet reflection or optional adventures including kayaking or an E-bike ride.
In the evening, we gather for a final celebratory meal and surprise, honoring the land, sea, and the rich tapestry of experiences shared throughout the week.
Enjoy a final breakfast at Odyssey Eco Farm, reflecting on the skills, memories, and deepened connections you carry home with you.
Depart with a greater appreciation for the intricate relationship between land, table, and soul—and a rekindled sense of belonging to the earth.
We’ve thoughtfully created this itinerary to give you a beautiful rhythm for our time together. At the same time, retreats have a way of unfolding uniquely, and we want to remain attentive to the needs of the group. Because of this, the schedule may shift slightly from time to time.
Greece also has its own natural rhythm shaped by the weather, the sea, and a more relaxed cultural pace. Because of this, certain activities or times may adjust organically and/or intentionally as we move through the week.
We value creating an experience that supports each person fully, and we appreciate your openness to any shifts that allow us to do so.
