This retreat was so magical. Red Clover is the perfect setting for everything that Laura & Emily teach on. It was so incredible to take in all the nature alongside Dani's cooking and Annie's hospitality. Cannot recommend this experience enough. 

Dappled

Fabulous! The accommodations were lovely. Beautiful property, comfortable room, thoughtful ownership and stupendous food cooked by Dani.

The workshops by Laura and Emily were a highlight. Both are patient and enthusiastic instructors and answered a wide variety of questions. Overall, the trip was one I’ll fondly remember as the perfect mix of the outdoors, food to savor and exploration. Only downside was that it was crazy humid & sweaty, but what can you do!

I feel very lucky to have stumbled upon the opportunity to join Emily and Laura on this baking and photography retreat. I left with a great sense of peace, a newfound love for baking, and a greater appreciation for lighting.

Join pastry chef Emily Spurlin and photographer Laura Scherb for a restorative and inspiring retreat at Red Clover Ranch. During our time together, we will focus on infusing our creativity with a sense of time and place. With Emily, you’ll learn about local plants and flowers and how to incorporate them into your baking, how to translate inspiration into cake decoration, and a decoration intensive focused on piping skills, natural food coloring, and decorating with flowers. We'll utilize the increased surface area of a personal sheet cake to create a landscape (or cakescape, if you will). With Laura, you’ll explore photography in the natural world, capturing light, color, and designing a beautiful still life to photograph.&nbsp; There will be plenty of time for rest and recreation at the Ranch, which has a biodynamic swimming hole, and soak up the natural beauty of the Driftless region of Wisconsin.

The nearest airports are Madison and La Crosse, Wisconsin. You can also fly in and drive from Minneapolis-St. Paul or Chicago, both about 3.5 hours away.

Red Clover Ranch’s Chef Dani Lind will prepare seasonally-inspired meals, largely sourced from surrounding farms. Meals are included in the retreat cost.

Our Japanese- and Scandinavian-inspired bathhouse features two full bathrooms, an outdoor shower, and an electric sauna. It also houses a screened-in porch with a summer kitchen and a lounge area.

We will arrive at Red Clover starting at 3pm on Thursday. &nbsp;Join us for late afternoon walk around the Ranch, then a cocktail/mocktail hour. We will all gather for dinner and a bonfire to talk about our weekend ahead.

Thursday

Day 1

Sleep in or enjoy a morning walk on your own. We'll head out on a foraging walk through the Ranch, then we'll meet for lunch. After lunch, we'll chat about heirloom grains and do a shortbread tasting to try each one. We'll spend the rest of the afternoon doing a lesson on color, then put together a golden hour living still life, then enjoy a beautiful dinner. After gathering for dinner, enjoy the sauna or a bonfire.

Friday

Day 2

After breakfast, we will make a field trip to the Viroqua farmer's market. After lunch, the focus of the afternoon will be an advanced cake decorating workshop and a photo shoot to capture our work. We'll enjoy our last dinner together, then gather round the bonfire one last time.

Day 3

For our final morning together, we will have breakfast together, pack up our goodies, and part ways - until next time!

Emily is a chicago- based award winning pastry chef, florist, and artist. Emily uses pastry as a medium to tell stories and translate inspiration into reality, especially focusing on the natural world as her muse.

Laura Scherb is a food photographer, stylist, and writer in Chicago, IL. She works in every capacity of food photography, from commercial work to editorial projects. Her passion is storytelling through light and color, and is particularly interested in shadow work.

Sunbaked is a collaborative retreat focused on storytelling through food and photos. Every summer, Nature offers her bounty to us, and as creatives, we felt called to create a space to respond to that in the form of art, both the edible and the visual. We will arrive at Red Clover starting at 3pm on Thursday. &nbsp;Join us for late afternoon swimming, followed by a stop at a local antique shop. We will all gather for dinner and a bonfire to talk about our weekend ahead.

Sleep in or enjoy a morning nature walk to take photos and gather inspiration for your cake and photoshoot. We will then reconvene to learn about making jam to preserve the height of the season, followed by lunch. Halee from Meadowlark Organics will join us to talk about the beautiful grains they grown in the region, which we will then use to bake our cakes. After gathering for dinner, we have free time to go on a nature walk or enjoy the sauna.

After breakfast, we will make a field trip to the Viroqua farmer's market to gather ingredients, props, and inspiration for our baking and photoshoots. We will send the rest of the morning discussing color in regards to photography and also using natural ingredients as food coloring. The focus of the afternoon will be decorating our cakes, and setting up a photoshoot to capture our work.
