Arriving at least a day early also ensures you can fully enjoy our Meet & Greet on the 15th, a relaxed and welcoming way to begin the week together. Please note that Madrid is the designated airport for both arrival and departure for the tour.

Before our Spanish adventure officially begins on Monday morning, we’re gathering for a relaxed, flavor-packed welcome the evening of Sunday, November 15. We always recommend arriving at least a day early to settle in, acclimate, and slip into Spain’s easy rhythm… and this night is the perfect warmup.

Join Chef Jose Mendin and Chef Richard Gruica for an upbeat Meet & Greet filled with good vibes, new friends, and a playful preview of the week ahead. The chefs have a special surprise waiting — we can’t reveal details, but let’s say it involves alcohol, pork, and plenty of joy.

The food and drinks for this evening are courtesy of the chefs, a little gift to kick off the adventure. However, your hotel stay for this night is not included in the trip package, and guests are responsible for their accommodations prior to the official start of the tour.

It’s the first toast, the first laugh, the first bite of an unforgettable journey.

Welcome to Madrid, where our culinary adventure with Chef José Mendín officially kicks off with flavor, flair, and a whole lot of fun. Today is all about getting deliciously lost in the city’s food culture, and we’re starting at the source: a private, chef-led market tour that doubles as the ultimate foodie crawl.

Chef José will lead us through Madrid’s legendary markets, where displays burst with ruby-red prawns, silky jamón, fragrant saffron, ripe produce, and sweet temptations that feel downright dangerous. You’ll taste, sip, crunch, and savor your way through handpicked stalls, each revealing a different chapter of Spain’s edible soul.

But the real magic happens after the market.

Armed with the freshest ingredients, we’ll roll up our sleeves for a hands-on cooking experience that transforms our haul into a feast. Our mission: to create the perfect paella. Not just a good paella. Not a decent paella. We’re talking the kind that earns a slow nod of respect from even the most particular abuela.


And trust us… Spaniards take paella very, very seriously. This dish is pride, heritage, ritual, and friendly rivalry all rolled into one fragrant pan.

Chef José will guide you step by step: from selecting the right rice to coaxing just the right socarrat — that golden, crispy, irresistible bottom layer that Spaniards guard like buried treasure. When the pan finally hits the table, steaming, saffron-kissed, and proudly built by your own hands, it becomes the centerpiece of our main meal together.

Between market tastings, culinary craft, and paella triumphs, we’ll also wander through some of Madrid’s most iconic sights. Sunlit plazas, elegant avenues, lively corners brimming with energy — the city reveals itself in little flashes between bites.

Madrid isn’t meant to be rushed or observed from behind glass. It’s a city best understood with your feet on the ground, your senses switched on, and a glass never too far from reach. Today, we experience Madrid the way locals do: walking its ancient streets, tasting as we go, and letting the city reveal itself layer by delicious layer.

We begin with a VIP guided walking tour, but this is no ordinary stroll. This is Madrid seen from the inside out. Think hidden corners, lived-in neighborhoods, and stories etched into stone. Our guide, Chef Jose, and Chef Richard will bring the city to life through their distinct lenses, with a food-and-drink twist that keeps us happily fueled along the way.

Old palaces and quiet gardens give way to buzzing markets and historic plazas. We sip where Madrileños sip, snack standing shoulder to shoulder with locals, and learn why some places are worth lingering in while others are best enjoyed quickly, like a perfectly chilled vermouth. Along the way, Madrid reveals its contrasts: grandeur and grit, elegance and chaos, reverence and revelry, all coexisting beautifully.

Mid-afternoon, we settle in for an epic meal at the oldest recorded restaurant in the world, founded in 1725. The ovens are ancient, the recipes timeless, and the walls seem to hum with centuries of shared meals and clinking glasses. This isn’t about trends or theatrics. It’s about tradition done perfectly, again and again.

Today isn’t about checking off sights.

Today unfolds at an easy, unhurried pace, the kind that rewards curiosity and invites you to linger.

We leave Madrid behind and glide north toward Segovia, a city that wears its history effortlessly. With no rush and no rigid agenda, we arrive in time to wander beneath the soaring Roman aqueduct, tracing cobbled streets and sun-warmed plazas where centuries seem to overlap. Segovia has a quiet confidence, and it reveals itself best on foot.

Midday is dedicated to one of Spain’s most revered culinary traditions: cochinillo, Segovia’s iconic suckling pig. This is not just lunch, it’s a ritual. We’ll enjoy it exactly as it should be, roasted slowly in a wood-fired oven, skin impossibly crisp, meat meltingly tender, prepared by masters who have been perfecting the craft for generations. This is cochinillo from the source, celebrated simply and proudly, as Segovia intends. A glass of local wine, good conversation, and the pleasure of doing things the right way.

After lunch, there’s time to stroll, browse, and let the afternoon breathe. Pop into small shops, admire the stonework, or simply sit with a coffee and watch Segovia pass by. Nothing is hurried. Everything is intentional.

In the early afternoon, the road opens, and the landscape begins to change. Wide skies and rolling fields signal our approach to Ribera del Duero.

Ribera del Duero is a land where wine has shaped life for more than two millennia. From Roman mosaics celebrating viticulture to medieval underground cellars carved into the earth, this region has long lived and breathed the vine. Officially recognized as a Denomination of Origin in 1982, Ribera del Duero is now celebrated as one of Spain’s great wine regions, defined by its rugged beauty, deep-rooted traditions, and uncompromising quality. Sandy, stony soils regulate moisture and force vines to dig deep, while dramatic temperature swings between day and night create wines of power, structure, and elegance.

At the heart of it all is Tempranillo, known locally as Tinta del País, a grape born of this land and widely considered among the finest expressions of its kind in Spain. Here, history, terroir, and intensity come together in every glass.

We arrive at the dramatic Peñafiel Castle, perched high above the valley like a sentinel. From its ramparts, vineyards ripple across the land below. Inside, the Ribera del Duero Wine Museum brings context and depth, weaving together history, terroir, and tradition, setting the tone for the days ahead.

From there, it’s a short, scenic drive to our home in wine country: Castilla Termal Monasterio de Valbuena. This restored 12th-century monastery is nothing short of magical. Ancient stone cloisters and vaulted ceilings meet contemporary comfort, creating a space that feels both grounding and indulgent. Thermal waters, serene spa spaces, and vineyard views invite you to slow down and settle in.

As evening falls, we gather for dinner in the hotel’s restaurant, where seasonal Castilian cuisine pairs beautifully with Ribera del Duero wines. There’s no need to rush. After dinner, the night is yours, perhaps a quiet stroll through candlelit corridors, or a final glass of wine beneath centuries-old arches.

This morning, we begin in the heart of Ribera del Duero, a landscape where vineyards stretch to the horizon, and every stone seems steeped in history. But today isn’t just about place — it’s about people, roots, and the lineage of learning. Chef José Mendin returns to a person who was instrumental in shaping the chef, man, and mentor he became: the esteemed Chef Jesús Ramiro. As one of José’s earliest teachers during his culinary education in Valladolid, Chef Jesús infused in him not just technique, but reverence for tradition, creativity, and the joy of shared meals. Though retired, Chef Jesús continues to delight in passing on the stories, rituals, and flavors of Castilian cooking, keeping alive a legacy of both heart and craft.

Our gathering begins with a hands-on “breaking bread” experience, where we learn to prepare Sopa Castellana, a rustic, garlicky, paprika-kissed bread soup that epitomizes the soul of this region. But it’s more than a recipe — it’s a touchpoint in a story. As the soup simmers and the aroma rises, we share local wine and memories, and hear Chef Jesús weave joyful recollections and bittersweet truths into the conversation. He carries both the pride of a lifetime in the kitchen and the deep love of a father who lost his own son — Chef Jesús Ramiro Flores — far too soon. Jesús Ramiro Flores was a rising star in Spanish gastronomy, a champion of regional cuisine whose impact resonated well beyond Valladolid before his tragic passing at age 43. In tribute to his talent and spirit, the emotional homage Recetas del Cielo brings together chefs across Spain in celebration of his legacy.

Here, in this simple bowl of soup, you taste history, mentorship, family, and loss. It’s a dish that carries more than flavor: it carries memory. In this intimate moment, we witness a passing of wisdom that helped shape José Mendin into the chef you see before you today — a chef who honors the past while constantly creating the future

Next, we’ll visit Fuente Acena, a hidden gem along the Duero River, housed in a restored boutique hotel that was once an old flour mill. This serene oasis celebrates fresh, honest ingredients cooked with care, letting the true flavors shine. The setting blends history and modern elegance, with light spilling onto stone and wood, and the river providing a gentle soundtrack. At the table, seasonal vegetables, local meats, and river fish are served with precision and respect, paired beautifully with wines that reflect the region. Fuente Acena offers more than a meal — it’s a quiet celebration of balance, beauty, and the essence of Ribera del Duero, nourishing both body and spirit.

After lunch, we slip quietly off the well-trodden path and into something far more intimate. Our destination is Dominio Lubiano, a true hidden gem in the heart of Ribera del Duero’s famed Golden Mile. This stretch of land is home to some of Spain’s most powerful wine names, but instead of marble tasting rooms and global brands, we choose something rarer: a living, breathing family story poured straight into the glass. This is exactly the kind of place Chef Richard loves to uncover, recommended again and again by locals who know where the real soul of the region lives.

Dominio Lubiano is the passion project of Emilio Lubiano and Mónica Peñas, two people deeply rooted in the land and fully invested in every vine and every bottle. Emilio works the vineyards by hand, tending organically farmed Tempranillo vines that surround the winery, while Mónica brings those grapes to life in the cellar, crafting wines with clarity, character, and a strong sense of place. Their winery, still evolving harvest by harvest, is a striking blend of concrete and glass, modern yet modest, designed to serve the wine rather than overshadow it. From its windows, you can see centuries of history unfold across the landscape, including the nearby Monasterio de Valbuena and the Hermitage of Nuestra Señora de Rubialejos, gentle reminders that this land has always been about patience and purpose.

Here, there’s no script and no spectacle, just honest conversation, shared curiosity, and wine that tastes unmistakably of the people who made it. We’ll gather in their welcoming wine bar, glass in hand, learning not just how the wine is made, but why. This is Ribera del Duero stripped back to its essence. Real people. Real work. Real wine. Their story, captured in a bottle, and shared with us in the most meaningful way possible.

Today is a slow, soulful descent into the layers that make Ribera del Duero extraordinary. Not just the wine, but the hands, histories, and quiet obsessions behind it.

We begin where great wine first takes form, not in the vineyard or the cellar, but in oak. Our morning unfolds at Tonelería Duero, a family-run cooperage whose barrels are trusted by many of Spain’s most respected wineries. Generations of knowledge live here, shaping the region’s iconic 225-liter barrels with a balance of tradition and modern precision. Set along the banks of the Duero River in Aranda de Duero, the cooperage uses the river’s natural humidity to slowly season sustainably sourced oak from France, Spain, the U.S., and Eastern Europe. This unhurried process coaxes elegance and nuance from the wood, allowing each barrel to quietly influence the wine it will one day hold. It’s a rare behind-the-scenes look at one of wine’s most essential, and often unseen, ingredients.

From oak to earth, we continue to Dominio de Cair, a winery that embodies the restless, perfection-driven spirit of the Luis Cañas Family. Born from winemaker Juan Luis Cañas’ relentless search for extraordinary vineyards, this striking, modern winery sits among ancient, low-yielding vines, some over a century old, nestled between rolling vineyards and pine forests near La Aguilera. Here, the philosophy is clear and uncompromising: great wine begins with great land. Our visit weaves together landscape, viticulture, and design, inviting us to walk the vineyards, understand the intent behind every detail, and taste wines that have quickly earned national and international acclaim. It’s engaging, thoughtful, and refreshingly unpretentious, wine explored with curiosity, conversation, and a sense of play.

Our final stop is where the day turns deeply personal. At Bodegas J.A. Calvo Casajús, the welcome begins not with a glass, but with bread, a heartfelt nod to the roots of founder, winemaker, and co-owner José Alberto Calvo Casajús. Born into a family of bakers in the small village of Quintana del Pidio, José Alberto was raised among ovens and dough before surrendering to a lifelong passion for wine. For generations, the Calvo and Casajús families made small quantities of wine for their own tables, aging them in traditional underground cave wineries that still exist today. That same respect for heritage defines the wines now, blending ancestral knowledge with modern technique, always guided by place and family.

This visit feels less like a tasting and more like being welcomed into someone’s home. We meet the family, uncover a few surprises, and taste wines that tell their story, including the celebrated NIC, named after José Alberto’s two children and now considered one of Spain’s top-rated wines. The day culminates where it should, around the table. Chef José and Chef Richard roll up their sleeves and cook alongside the family, preparing a meal rooted in seasonal, local ingredients, shared with generous pours, laughter, and the kind of connection that can’t be staged.

As evening settles in, we return to our hotel full in every sense, nourished by great wine, meaningful stories, and the quiet joy of a day lived well.

Today is about leaning in. Into flavor. Into craftsmanship. Into the quiet confidence of one of Spain’s greatest wine regions. This is Ribera del Duero at its most generous and most delicious.

Our day begins with an extraordinary experience at Pago de Carraovejas, one of the crown jewels of the region. Here, we take part in “Landscapes with Alma,” a deeply thoughtful journey through the world of Alma Carraovejas, a collection of visionary gastronomic and wine projects rooted in both history and vanguard thinking.


We’ll tour the winery and then sit down for a beautifully orchestrated tasting of four wines, each representing a different Alma Carraovejas project. These are not poured casually. Each wine is paired with a refined bite created by Ambivium, the on-site Michelin-starred restaurant, where technique, terroir, and emotion converge. This is wine tasting elevated to storytelling, where every sip and every plate reveals intention, precision, and soul.

From there, we move into one of Ribera del Duero’s most authentic pairings: wine and cheese. At Bodegas Raíz de Guzmán, we step into a story that begins not with wine, but with cheese. The Raíz project was born from Páramo de Guzmán, an artisan dairy founded in 1985 and dedicated to crafting exceptional cured cheeses from Churra sheep’s milk, a breed native to the region.


Their wines, made from 100% Tempranillo, reflect the same respect for origin and tradition. During our visit, we’ll explore the winery and enjoy a guided wine and cheese tasting, where robust Ribera wines meet nutty, complex, perfectly aged sheep’s milk cheeses. It’s a pairing that feels inevitable, honest, and deeply Castilian.

Then comes lunch, and this is where fire takes over.

We head to Asador Nazareno, a name spoken with reverence across Spain. This is a temple of lechazo asado, the region’s famed wood-fired suckling lamb. Our final full day unfolds at an unhurried, reflective pace, just as it should. The morning is yours to enjoy slowly at the hotel. Sleep in, savor a last coffee overlooking the vineyards, wander the cloisters one more time, or slip into a moment of quiet before we begin our journey back to Madrid.

Late morning, we’ll check out and make our way back toward the capital, carrying with us the flavors, stories, and friendships formed over the past week. Before settling back into the city, we’ll gather for one last meal together. It’s a chance to relive favorite moments, raise a final glass, and laugh over memories that already feel timeless. Good food, good wine, and even better company, a proper closing chapter to an extraordinary journey.

Together, we explored Spain not as visitors, but as guests welcomed into its kitchens, vineyards, and traditions.
