Co-hosted by James Beard Award-winning Chef Vishwesh Bhatt of Snackbar in Oxford, Mississippi, and lovingly curated by Chef Richard Gruica of The Gourmet Vacation. That evening, join us for a warm and lively Meet & Greet with Chef Vishwesh and Chef Richard at the enchanting Mesale Café, nestled in the heart of Sultanahmet.


As the sun sets over Istanbul, Mesale Café comes alive with the aroma of Turkish tea and coffee, the glow of colorful lanterns, and the sounds of traditional instruments like the oud and ney flute. Lounge on cushioned seats, sip on freshly brewed tea and enjoy a spread of appetizers as you connect with fellow travelers.

Today’s adventure begins beneath the bustling streets of Istanbul as we descend into the Basilica Cistern, an architectural marvel built during the reign of Emperor Justinian I in the 6th century. This subterranean wonder, once a crucial water source for the city, enchants visitors with its vast forest of marble columns reflected in shimmering waters. The cistern's atmospheric lighting and haunting Medusa head carvings offer a glimpse into the city's Byzantine ingenuity and mystique, setting the stage for a day filled with discovery.


Emerging from the depths, we’ll dive into the vibrant culinary world of the Spice Market, or Mısır Çarşısı. A food lover’s paradise, this historic market buzzes with vibrant colors, enticing aromas, and lively chatter of traders selling their wares. Here, we’ll indulge in tastings of local meats and cheeses, savoring the rich, artisanal flavors that define Turkish gastronomy. Next, we’ll sample aromatic teas, exotic spices, and delectable desserts, including lokum (Turkish delight) and baklava, each bite telling its own story of Turkey's rich culinary heritage.


Our journey continues to the iconic Galata Bridge, a hub of life and activity that stretches over the Bosphorus. Lined with seafood restaurants below and local fishermen above—casting their lines daily for just two magical hours—the bridge is a symbol of Istanbul’s enduring connection to the water. Here, we’ll enjoy a leisurely seafood meal at one of the classic waterside restaurants, dining on the freshest catch of the day while taking in the lively atmosphere of this bustling crossroads.


As the day winds down, we’ll board a private sunset cruise on the Bosphorus, a perfect finale for our exploration. Glide between two continents as the golden hues of twilight paint the Istanbul skyline. Our venue for this special night is the renowned Cercis Murat Konağı, a culinary treasure led by the celebrated Chef Ebru Demir. Start the day with a captivating walking tour through the heart of Mardin’s city center, where ancient stone streets and vibrant culture come to life. As we meander through this timeless city, we’ll head to a rooftop spot for a Turkish coffee demonstration. Here, we will learn about the art of making traditional Turkish coffee, sharing tips on what to buy, how to prepare, and the perfect way to serve it—an experience that will leave you with a new appreciation for this iconic drink.


Next, we’ll visit the Living Museum of Mardin, where we’ll explore various demonstrations that bring the region’s rich heritage to life. From musical performances to cultural exhibitions and artistic displays, each demonstration offers a unique insight into the diverse traditions of Mardin.


Following our immersion in local culture, we’ll roll up our sleeves for a hands-on kebab workshop. Turkey is world-renowned for its delicious kebabs, and Chef Ebru will teach us the secrets behind preparing these flavorful skewered delights. Afterward, we’ll enjoy a well-deserved lunch featuring the fruits of our labor, indulging in the kebabs we’ve crafted ourselves.


The afternoon offers a chance for some free time before we regroup to visit Topraktan Tabaga Koop (From Soil to Plate), a collective led by Chef Ebru, dedicated to showcasing the best of local produce. Here, we’ll witness the farm-to-table philosophy in action, gaining insight into the region’s agricultural practices and sustainable methods.


Next, we’ll take part in a hands-on soap-making experience using locally sourced ingredients. As a special surprise, we’ll incorporate one of these products into our creations, adding a personal touch to this memorable experience.


We’ll cap off the day with an extraordinary multi-course tasting dinner at Zamarot, Chef Ebru's flagship restaurant, housed in her family’s ancestral home. Each dish is a tribute to Mardin’s culinary heritage, crafted with love, history, and the freshest local ingredients. This unforgettable meal is the perfect way to celebrate the flavors, culture, and people of Mardin.

We begin our journey with a visit to a family-run pomegranate farm, where the trees are heavy with fruit, ready for harvest. You’ll roll up your sleeves and join the farmers in gathering the pomegranates, an activity that fosters a true connection to the land and its rhythms. As you pick the fruit, you'll learn about its cultural and culinary importance, not just as a fresh delight but also as the source of a treasured local ingredient: pomegranate syrup.


Used extensively in Mardin's cuisine, pomegranate syrup is a cornerstone of both sweet and savory dishes. Its tangy, complex flavor adds depth to marinades, dressings, and even desserts, making it an indispensable ingredient in traditional recipes. You'll gain insights into the syrup-making process, from pressing the fruit to the slow cooking that transforms its juice into a luscious, aromatic reduction.


After the harvest, you'll join a collaborative effort to prepare a grand farm-to-table lunch feast, which we are calling The Gypsy Table. Guided by the culinary artistry of Chef Ebru, Chef Vishwesh, Chef Richard Gruica, and other local culinarians, you'll witness how the freshly harvested pomegranates are celebrated in various dishes. This family-style meal served amidst the rustic beauty of the farm, is a joyful culmination of the day’s labors—a celebration of seasonal abundance and shared traditions.

As evening approaches, we’ll regroup for a fitting conclusion to this incredible journey: a farewell dinner at the renowned Michelin-starred Neolokal. Located within the Salt Galata building, Neolokal is more than just a restaurant—it is a culinary homage to Turkey's gastronomic heritage. Helmed by the visionary Chef Maksut Askar, Neolokal reimagines traditional Anatolian dishes with modern techniques, crafting a menu that tells a story of sustainability, history, and innovation.

On our final day in Istanbul, we’ll venture to the bustling heart of the city: Taksim Square. A dynamic hub of culture, history, and modern life, Taksim Square is often referred to as the “crossroads of Istanbul.” It’s a place where the city pulses with energy—home to iconic landmarks, vibrant street performers, and the historic Republic Monument, commemorating the founding of the Turkish Republic.


We’ll journey to Taksim Square aboard the famed funicular, one of the city’s oldest and most charming modes of transportation, which seamlessly connects the Karaköy district to the lively streets above. Once we arrive, we’ll explore the enchanting Galata area, dominated by the storied Galata Tower. This medieval marvel offers panoramic views of Istanbul’s sprawling cityscape, where the shimmering Bosphorus meets a tapestry of domes and minarets.


From there, we’ll stroll along Istiklal Street, a vibrant pedestrian avenue brimming with life. This bustling street is a cultural mosaic, lined with historic architecture, boutique shops, cozy cafes, and art galleries. As we meander through its lively atmosphere, we’ll soak in the eclectic essence of Istanbul, where tradition and modernity intertwine seamlessly.


Once we’ve worked up an appetite, we’ll join Chef Maksut Askar, who will guide us to his favorite Istanbul spot for döner—a quintessential Turkish dish.
