The Sweet Life: A Bali Experience

with Chef Will Goldfarb and The Gourmet Vacation

Get ready for something truly groundbreaking from The Gourmet Vacation—an adventure unlike anything we've ever done before. While our signature experiences have always centered around bringing chefs to stunning destinations and creating unforgettable journeys together, this time we’re flipping the script. Instead of taking the chef to the destination, we’re taking you to the chef—in their element, in their world, in a way that invites total immersion and transformation.

We’re heading to the lush, mystical island of Bali, where we’ll spend eight unforgettable days with none other than Chef Will Goldfarb, one of the world’s most visionary pastry chefs. Known globally for redefining the dessert experience, Chef Will is the creative force behind Room4Dessert, a wildly inventive and globally lauded concept restaurant in the heart of Ubud, and the adjacent Shelter Island, his boutique guest house that brings his philosophy of sustainability, community, and design to life.

This trip isn’t just about food—it’s about connecting deeply with the ideas, flavors, and people that make this corner of the world so magical. Room4Dessert is more than a restaurant—it’s a culinary lab, a farm, and a sanctuary for ideas that blend indulgence with purpose. You’ll get exclusive access to behind-the-scenes experiences with Chef Will and his team, from interactive cooking sessions to regenerative farming practices, all wrapped in a spirit of creativity and fun. At Shelter Island, you’ll rest and recharge in beautifully designed accommodations nestled in the jungle, where every detail is infused with meaning and intention.

Curated in partnership with Chef Richard Gruica of The Gourmet Vacation and Chef Will Goldfarb himself, this intimate journey—limited to just 20 guests—will be brimming with gastronomic exploration, hands-on creativity, sustainable living, and meaningful community moments. Each day will be thoughtfully designed to inspire and nourish you, both in body and soul. Think: market visits, fermentation and pastry workshops, sunrise walks, storytelling dinners under the stars, and quiet moments in the serene beauty of Ubud.

This is more than a vacation. It’s a once-in-a-lifetime journey into the mind and world of a culinary genius, and a chance to share that experience with a small group of curious, passionate travelers. Come join us for an adventure where every moment matters and every bite tells a story.

Chef Will Goldfarb: The Dessert Revolutionary of Bali

Globally renowned for his inventive, boundary-pushing approach to pastry, Chef Will Goldfarb has redefined the role of dessert in modern gastronomy. A New Yorker by origin, Goldfarb trained at Le Cordon Bleu in Paris and honed his craft in some of the world’s top kitchens—working under culinary legends such as Ferran Adrià at El Bulli and Tetsuya Wakuda in Sydney.

But it’s in Ubud, Bali, where Chef Goldfarb has truly found his rhythm—and where he’s created a world unlike any other with his celebrated concept: Room4Dessert.

At Room4Dessert, Goldfarb fuses fine dining with sustainability, wellness, and playfulness. The experience is part dessert tasting menu, part permaculture garden journey. Each dish is deeply personal, drawing inspiration from nature, memory, and local ingredients. The multi-course menu showcases avant-garde techniques alongside a deeply rooted respect for seasonality and Balinese culture.

Beyond his whimsical and wildly creative plated desserts, Chef Goldfarb is pioneering a new model of ethical gastronomy. The property operates a regenerative garden, grows many of its own ingredients, and supports local farmers, producers, and artisans. He’s a vocal advocate for sustainable practices and holistic hospitality—where flavor, storytelling, and responsibility meet.

As featured on Netflix's Chef's Table: Pastry, Goldfarb is more than a pastry chef—he’s a provocateur, philosopher, and visionary who proves that dessert isn’t just the end of a meal—it’s a beginning.

Whether you’re a culinary pilgrim or simply dessert-obsessed, Room4Dessert in Bali is a must-visit: a place where imagination runs wild, sugar meets soul, and every bite tells a story.

But now, imagine living that story—day in and day out. By joining The Sweet Life: A Bali Experience with Chef Will Goldfarb and The Gourmet Vacation, you won’t just get to experience it once—you’ll get to eat it, sleep it, breathe it every day for 8 unforgettable days.

This is a truly rare opportunity to step inside the wild, wonderful world of Chef Will Goldfarb. This is WAY MORE than a vacation; it is a deep dive into one of the most inspired culinary minds of our time, set against the tropical beauty of Bali.

Welcome to The Sweet Life

A Bali Experience with Chef Will Goldfarb and The Gourmet Vacation

We’re so happy you’re here and even happier that you’ll be joining us for this truly special journey. What you’re about to experience isn’t just a trip. It’s an immersion. A shared table. A front-row seat inside the creative world of one of the most visionary pastry chefs of our time, set in one of the most soulful places on earth.

The Sweet Life officially begins on Monday, September 7th, but Bali has its own rhythm, and we strongly encourage guests to arrive earlier to settle in, adjust to the time difference, and ease into island life. Our arrival day for Shelter Island is Sunday, September 6th, with guests arriving throughout the day.

For those who would like a soft landing, Shelter Island will be available prior to the 6th. If arriving early feels right for you, just let us know, and we’ll happily arrange everything at our preferred rates.

From the moment your journey begins, the experience is thoughtfully designed. You’ll be welcomed with a curated in-flight video or podcast introducing the philosophy behind Room4Dessert, along with a glimpse into Balinese culture and the spirit that shapes the days ahead. Upon arrival at the airport or from your initial Bali stay location, you’ll be greeted by Room4Dessert representatives and a dedicated driver for a seamless, friendly transfer. A swag bag awaits you, too, complete with a trip-themed T-shirt and local snacks to enjoy as your adventure begins.

Once settled at Shelter Island, you’ll have time to relax, breathe, and acclimate. Wander the grounds. Listen to the jungle. Let the pace soften. This day is intentionally unstructured, a chance to arrive fully before we begin. We will end the day on a high note, as our first group dinner is the Room4Dessert Experience: Season 21, the heart of Chef Will Goldfarb’s creative universe. This multi-course journey is more than a meal. It’s a narrative told through texture, temperature, sweetness, and surprise. Each course arrives with intention, unfolding like chapters in a story that blends Bali, memory, technique, and play. This is one of the world’s most sought-after dessert experiences, and tonight, it belongs exclusively to our group.

By the time the final course fades, the jungle hums softly outside, and you realize something has shifted. You’re no longer just visiting Bali. You’re inside it.

Connected. Present. Ready.

This is how the journey begins.

Slowly. Thoughtfully. Unforgettably.

So, get ready, as the next unforgettable days, you’ll get to step into Chef Will Goldfarb’s world. Not as a spectator, but as a participant. This journey flips the traditional culinary trip on its head. Instead of bringing the chef to a destination, we’re bringing you to the chef, right where his ideas live and grow. You’ll experience Room4Dessert not just as a restaurant, but as a living ecosystem, one that blends pastry, storytelling, regenerative farming, sustainability, and play.

Expect behind-the-scenes access, hands-on sessions, market visits, fermentation and pastry workshops, storytelling dinners, sunrise walks, and moments of quiet reflection woven through the lush beauty of Ubud. Shelter Island will be your home base, a beautifully designed jungle retreat where rest, intention, and creativity coexist.

Curated in close collaboration with Chef Will and Chef Richard Gruica. It’s designed for curious travelers, passionate eaters, and those who believe food is a gateway to culture, connection, and joy.

This is more than a vacation.
It’s a deep dive into imagination.
A celebration of flavor, place, and purpose.
A week where dessert becomes a beginning.

Official Tour Opening: Balinese Culture & the Room4Dessert World

DAY 1 | September 7th

Official Tour Opening:

Balinese Culture & the Room4Dessert World

Morning arrives softly in Ubud. The air is warm, green, and alive, carrying the scent of earth, flowers, and woodsmoke. This first full day is designed not to rush you forward, but to gently draw you in. To ground you. To let Bali introduce itself in its own quiet, confident way.

We begin with breakfast at The Powder Room, where the table feels more like a pause than a meal. Fresh, locally inspired bites arrive with ease and intention, enjoyed in a setting that invites you to slow your breathing and listen to the jungle waking up around you. This is not fuel for the day. It’s a welcome.

From there, we step directly into the source.

Our morning unfolds inside Room4Dessert’s Food Forest, a living pantry rarely experienced this way. Guided through lush pathways of cacao, herbs, roots, and fruit trees, you’ll begin to understand how flavor in Bali is born, not on a plate, but in soil, sunlight, and care. This is an intimate, behind-the-scenes exploration, limited to our small group, where questions are encouraged, and curiosity is rewarded. You’ll take part in hands-on planting and ingredient processing, working with the land rather than simply observing it. It’s grounding. It’s tactile. And it quietly reshapes the way you think about food.

Lunch brings us to Room4Dessert, where the kitchen turns tradition into poetry. The R4D team presents a Balinese-inspired menu that honors heritage flavors while gently bending them into something new. This is not a restaurant stop open to the masses. It’s a table set specifically for us, where the food tells stories of place, memory, and imagination, and where each dish feels both rooted and daring.

In the afternoon, Ubud opens itself further. We wander through sacred temples where incense drifts through stone gates, and offerings sit delicately on mossy steps. Ancient rituals hum quietly in the background. From there, we dive into the vibrant pulse of Ubud’s central market, alive with color, voices, spice, and movement. Here, Bali is bold and joyful, layered and real, a beautiful contrast to the stillness of the morning.

As the golden light of evening drapes over Ubud and the jungle hums its gentle lullaby, a palpable excitement stirs among us—a sense that something extraordinary awaits. Tonight, we are invited into a singular culinary celebration:

Room4Dessert GOAT Vol. 2. Aptly named, The Greatest of All Time, Volume 2, this is more than a dinner—it is an immersive journey through the very heart of Chef Will Goldfarb’s imagination and mastery.

Each course is a story, each bite a revelation. Here, the flavors of Bali meet innovation and artistry in perfect harmony, weaving together the essence of this entire adventure: creativity that inspires, community that connects, and the sheer joy of indulgence that lingers long after the last morsel. From the first whisper of flavor to the final flourish on your plate, you will taste the pinnacle of a career defined by daring, vision, and devotion.

This evening is exclusive, intimate, and unforgettable—an experience reserved for those fortunate enough to walk these paths, share these moments, and savor the genius of one of the world’s most visionary pastry chefs. Tonight, Room4Dessert becomes not just a restaurant, but a stage for celebration, discovery, and delight—a feast that honors the journey, the land, and the people who make it all possible.

The R4D Academy: From Imagination to Plate

DAY 2 | September 8th

The R4D Academy:

From Imagination to Plate: A Day Inside the R4D Kitchen

The day begins softly, the jungle waking around you as light filters through palms and birdsong replaces any sense of hurry. At The Powder Room, breakfast feels familiar now, comforting and unforced, a quiet ritual before the day’s creativity unfolds.

This morning, the doors open to the heart of Room4Dessert. Not as spectators, but as participants in the  Room4Dessert Academy. Inside the R4D kitchen, you step alongside the pastry team for an exclusive, hands-on workshop designed just for our group. This is not a demonstration. It’s an invitation. You’ll learn the techniques, textures, and philosophies behind the desserts that have made Room4Dessert one of the most talked-about culinary destinations in the world. Guided by the Pastry Chef, you’ll experiment, create, and ultimately plate your own dessert, a personal expression shaped by Bali’s flavors and your own imagination. It’s playful, intimate, and deeply satisfying, the kind of experience rarely offered beyond these walls.

Lunch brings us back to the table at Room4Dessert, where a Balinese-inspired menu showcases the region’s vibrant ingredients through the R4D lens. Seasonal, thoughtful, and beautifully composed, it’s a moment to pause, taste, and reflect on the craft you’ve just experienced firsthand.

As evening approaches, we trade refinement for pure local soul. Dinner at Naughty Nuri’s is a joyful contrast, a legendary Ubud institution known for its finger-licking ribs, bold flavors, and irreverent spirit. Laughter flows easily here, the energy lively and unpolished in the best way, reminding us that Bali’s food culture lives as much in its humble, beloved spots as it does in its most elevated kitchens.

Today is about access. About creating, not just consuming. About being welcomed behind the scenes and into the rhythm of a place that values flavor, joy, and connection in equal measure. And as the night settles over Ubud, you’ll realize you’re no longer just visiting Bali, you’re becoming part of its story.

Sustainability & Creativity-Roots & Renewal: Giving Back to Bali

Day 3 | September 9th

Sustainability & Creativity

Roots & Renewal: Giving Back to Bali

Today unfolds with intention. Not loud. Not hurried. Just deeply rooted in the quiet understanding that Bali is not something to consume, but something to care for.

The morning begins gently at The Powder Room, where a nourishing breakfast sets the tone for a day guided by purpose. As the island wakes around you, birdsong weaving through the air and light filtering softly through green, you ease into the rhythm of Ubud, calm, grounded, present.

Then we step beyond the table and into action. Along Bali’s waterways, you’ll take part in a Sungai Watch River Clean-Up, joining a local movement dedicated to protecting the island’s lifeblood. This is not performative or symbolic. It’s real work, meaningful and humbling, offering a direct connection to the land and the people who safeguard it. Hands meet water. Effort meets impact. And suddenly, Bali feels less like a destination and more like a responsibility shared.

Lunch follows in true Balinese spirit. Bungkus, simple and soulful, wrapped with care and bursting with local flavor. No fuss, no frills, just honest food enjoyed as it’s meant to be, connected to place, eaten slowly, appreciated fully.

The afternoon opens into a space of creativity and renewal. Choose from a series of sustainability-focused workshops that transform what was once discarded into something beautiful. Recycled fibers become paper. Used oil turns into candlelight. Wine bottles find new life as glassware. Compost feeds future growth. Each experience is tactile, thoughtful, and quietly powerful, a reminder that creativity and stewardship are deeply intertwined here.

As the light fades and the day gently exhales, we come together for dinner at Begawan Biji, an organic farm-to-table restaurant set on a regenerative farm just outside Ubud. Surrounded by the quiet beauty of rural Bali, this serene setting reflects the essence of the day itself—intentional, earth-driven, and deeply rooted in respect for nature. The cuisine is thoughtful and restrained, guided by seasonality and balance, allowing the land to speak through each dish. It’s a meal that nourishes more than the body, inviting reflection, connection, and a deeper appreciation for the harmony between food, environment, and place.

This day is about giving back, yes, but it’s also about receiving something rarer. Perspective. Connection. A deeper understanding of how food, land, and community can exist in harmony.

You won’t just remember this day.
You’ll carry it with you.

Ethical Foraging: A Field to Fork Journey

As the morning light drapes softly over Ubud, we begin our day at The Powder Room, savoring a gentle, nourishing breakfast that readies us for a day of connection, discovery, and reverence for the land. Today, we step beyond the familiar and into the heart of Bali’s living, breathing cuisine with a Field to Fork Adventure led by Made Masak, a local farmer, guide, and storyteller. Walking through verdant fields, we learn the ancient rhythms of planting and harvesting, witness the care and ritual that sustain the land, and hear the stories woven into every herb, root, and fruit. Each moment is a lesson in patience, respect, and the profound dialogue between people and the earth.

For lunch, the morning’s bounty transforms into a farm-fresh meal prepared by Made Masak herself, rustic, soulful, and imbued with the flavors of the land we’ve just explored. Every bite tells a story of tradition, of hand-tended soil, and of the deep connection between the land and those who nurture it. She calls it Cooking from Soil to Soul.

As the day fades into evening, the journey crescendos in a special collaborative dinner with Made Masak—a secret yet-to-be-revealed setting designed to delight, surprise, and connect. Expect a communal table, heartfelt conversations, and dishes that feel both intimate and extraordinary. This is a day of exclusivity and authenticity, where each step, taste, and story draws you closer to the soul of Bali, leaving you with memories as rich and layered as the island itself.

Creation & Craft: Hands, Hearts, and Heritage

As dawn breaks over Ubud, we begin our day at The Powder Room, savoring a leisurely breakfast that gently stirs the senses and readies us for a day steeped in artistry, flavor, and tradition. Today is an invitation to immerse yourself fully in the creative spirit of Bali—where every hand-crafted object, every carefully prepared dish, and every story shared carries the weight and wonder of centuries.

The morning unfolds with a Balinese cooking class, where local traditions come alive through flavors, techniques, and stories passed down through generations. Each ingredient, each movement in the kitchen, is a step deeper into the island’s soul—a culinary choreography that blends history, ritual, and joy.

Lunch at Room4Dessert celebrates these experiences with a menu that honors local flavors while embracing inventive flair—a moment to nourish the body as creativity nourishes the spirit.

In the afternoon, guests choose their path of personal creation.
